My husband believes that romano cheese is at its best when it cracks. He says that that means it is sharp and aged to perfection. One of our favorite things to do is to visit the Italian Market in South Philadelphia on Saturday mornings. "This is where you find the real deal."
I'm pretty sure he meant the cheese.
