Cold beer and noodles. Sometimes the title says it all. It’s the end of the long working day, you’re hungry but too tired to cook…to tired to even think about cooking…and there she is. In her bright blue shirt standing in front of her bright red cart, offering you simple fare served in a simple way. Cold beer and noodles.

Peasant food. That’s a compliment. The renowned chef James Beard often celebrated traditional peasant food; easy to prepare, simple to present, inexpensive, filling, comforting. It’s that wonderful combination of qualities that makes us appreciate it. Whether its a spicy goulash from central Europe, a chicken and sausage perlow from the Carolina Low Country, or a bowl of noodles in the train station at Chengdu, the food of common folk always appeals.
