I cleaned my knife real well, taking care to remove the slightest trace of skin & blood. Twice. You can never count on the first pass getting everything. After all that was done to my satisfaction I gave the blade & handle a good wipe with the dish towel then set it on the counter to air dry the rest of the way.

I did a good job of filleting that bottom feeder and I was proud of the job too. It wasn't the first time and I'm sure it won't be the last I had to do something like that.

Now that all was taken care of I decided to relax with some of the best bourbon I have. In fact the only bourbon I have. I'll make quick work of it too because it won't be long before the bass fillet is ready to come out of the pan and onto my plate.
