olives in the rain

ready to be harvested - in Nyons and region, the olives are of the tanche variety; they are picked green in summer, and soaked in brine for eating, or left on the tree to turn black and wrinkled, when they are harvested, usually in December. The large fruits are reserved for eating, the others pressed for oil.
