Chilies

These chilies are set out to dry. Once they are dry they will be strung to make a ristra. To keep dried chilies fresh and free of bugs they are strung together on a string and hung on a wall out of the sun. Throught the year the cook will pull off a few for use in whatever might be cooking. These happen to be anaheim chilies but all varieties are dried and kept this way. In the border Southwest everything can come with chili even chocolate.
