Summer Salad

The finished product!

Coarsely chop 3 ripe tomatoes and 1 ripe red mango.
Finely chop 1/2 of 1 small Vidalia (or other sweet) onion and 10 stalks of cilantro (leaves & stalks included-more can be added if desired!).
Dice 1 knuckle-sized chunk of ginger and 2 cloves of garlic.
Combine all ingredients in a bowl.
Add 1 tbsp each of olive oil, balsamic vinegar and rosemary-infused white wine vinegar.
Add (to taste) dash each of cumin, lemon grass, salt & freshly ground pepper.

Stir well and garnish with a sprig of cilantro.

This salad also tastes wonderfully with a dash or two (or 3) of your favourite hot sauce.

It theoretically serves quite a few people, but I polished it off by myself. =)
