The finished product...garnished with butter, extra-sharp cheddar cheese crumbles, coarse kosher salt, fresh ground pepper and cilantro leaves.

According to Nigel Slater (whom I worship), jacket potatoes are best thoroughly scrubbed then rolled in kosher salt. Cook at 400F for about an hour.
