The scent of elder blossom, frothing in the air like ice cream and lime soda. Admire the bubbles of white and cream before noon. Make it into “champagne” or cordial, dip it in batter and fry in butter.

By August those blooms that you left behind will have ripened to a deep claret colour, ready for making wine or soothing medicine against a winter cough.
